Ahh… Summer and the Grill

 

  
I joined Reynolds Aluminum’s email list a long time ago.
They give some good ideas and of course the foods are
delicious.
Summer time is the best time to be on this  list.  I took
advantage of one of their latest items for the grill.
  
I’ve taken license so if you want the real one, look for it on
their site.  There is also a Greek version with Feta cheese.
  
It’s very simple. You will need.
  
Grill with a high temp. (to start) 450-500 degrees
  
Olive Oil
  
Italian Dressing
  
Grated Parmesan Cheese
  
Zucchini Squash  1-2 for a small group.  As many as you want
for a crowd.  I’m using one good size squash
  
3 tomatoes.  I use the ones on sale in the wrapper.  They’re usually
hard as a rock.  Perfect for this kind of recipe. An average size
garden tomato is what you want.  Not plum.  You want a tomato
with juices.
  
Make an aluminum foil package that will hold the vegetables and seasonings.
  
add sliced Zucchini, and chopped Tomatoes.  Don’t slice the tomatoes, you want
them in large pieces.
  
 
 
Drizzle some Italian dressing over the mixture, and about two tablespoons
olive oil.  I didn’t have the Italian dressing so I used Caesar.
 
Put on a very hot grill…450-500 degrees.  Once you hear it  starting to cook,
it’s okay to decrease to 325-350.  And let cook a good half hour. That’s all it
will take. Then remove from grill, don’t open but let it stew in it’s own juices.
About a  half hour.  I take it from the grill then finish up the rest of the meal
preparation.
 
Open the foil and you’ll find the most delicious and pure flavored food.
It’s both sweet and tasty.  The tomatoes dissolve into a lovely broth.
The Zucchini is a bit wilted and has a wonderful flavor.
And the best part of all is a generous helping of Parmesan Cheese.
